Introducing the chicken and pumpkin soup from the Philippines this recipe is best serve as starters that will make you crave for more. I personally chose this soup because of it's "Filipino Taste". We Filipinos are food lovers that is why we have different kinds of dishes including this one that i will share to you

The the two main ingredients are chicken and pumpkin. Chicken as we all know is a good source of protein and pumpkins are good source of vitamin A for our eyesight so this dish is a very healthy one so you can serve them to your family or even guests Smile

The cost of this dish is also affordable so you wouldn't have to spend much for groceries and stuff just to attain a good food this is a very good dish because it's affordable,healthy and most of all very easy to prepare

and without further a do here is your recipe enjoy!

CHICKEN AND PUMPKIN SOUP

Serving of 5 good for 5 persons

The Ingredients:
2 tablespoons canola oil
1/3 cup chopped onions
1 pound skinless, boneless, chicken breasts
3-4 cups water
2 medium tomatoes, chopped
4 cups sliced and peeled pumpkin
6 pumpkin tips (leaves), or spinach
1/2 cup light coconut milk + 1/2 cup nonfat milk
1 green pepper, sliced
3 tablespoons lemon juice
salt, to taste

Steps on how to cook:
Wash pumpkin tips, chop into 1-inch pieces.

Saute onion in oil. Cut chicken into 1-inch pieces and add to onion. Cook about
10 minutes, uncovered. Add water, lemon juice and salt. Bring to a boil, then
lower heat and cook 15 minutes, covered.

Add tomatoes, pumpkin, green pepper and pumpkin tips. Cook 5 more minutes.

Add coconut milk/nonfat milk mixture. When mixture comes to a boil, remove
from heat. Serve hot.


COOKING TIP! To reduce fat even further, use “light” coconut
milk or consider omitting and use only nonfat milk.

This recipe is for starter dish and not a main course
